Subtitling video is a pain in the neck. I used to use Magpie, but it is not really useful if you are intending to subtitle DVD's.
Miyu is/was a subtitling package for the Mac. The software was free, but a commercial plugin pack gave you more options, including the ability to export to a format that DVD Studio Pro understands. Now the whole thing, including the Pro Plugins, is free.
